Patient’s Guide Information: Multiple Sclerosis

Multiple Sclerosis (MS) is a chronic autoimmune disease that affects the central nervous system (CNS), specifically the brain and spinal cord. In MS, the immune system mistakenly targets the protective covering of nerve fibers, called myelin, leading to inflammation and damage. This disrupts the transmission of electrical impulses along the nerves, causing a wide range of physical, sensory, and cognitive symptoms.

The prevalence of MS varies geographically, but it is estimated that there are around 2.8 million people worldwide living with MS. Although MS can occur at any age, it is most commonly diagnosed between the ages of 20 and 50. That being said, MS can affect individuals of all ages, including children and older adults.

Regarding gender, MS has a higher incidence in women compared to men, with the ratio varying between 2:1 and 3:1. The reasons for this gender disparity are still not fully understood. Researchers believe that a combination of genetic, hormonal, and environmental factors may contribute to the difference in MS prevalence between males and females.

Non to Low Carbohydrate Intake Day 1 :

I have been around the vegan raw food space for over 40 years. In my thirties I did very well no illnesses, skin looked great no issues. I have even assisted a number of persons with their health concerns.

Fast forward to 50 plus and nothing worked as pertain to my diet and weight loss. So the weight piled on and no remedy to reduce the weight . It got so bad that one night I said Lord I need help.

You would not believe what happened next one day later. While on you tube looking for one of my favorite plant base you tubers – I scrolled down and clicked on “carnivore diet”. My mind started – “what are you doing- no way – for 40 years you learned something different- Fruits and vegetables , water, exercise, decrease stress. I

looked at about 5 other presenters but they were of Caucasian descent. Then my mind said to see if there were any African descendants eating this way (black people). To my disbelief I found “ Black Carnivore”. For the entire evening and into the early morning hours I listened to a number of videos posted on her channel.

Six hours later I quickly strolled into the grocery store in my community and purchased – 2 bags of organic chicken, 2 dozen organic eggs, 1 bag of salmon pieces and a 1/4 pound of cheddar cheese. I purchased the meat base items I would eat from time to time even though mainly vegetarian.

I decided try this way of eating because I was getting frustrated with food since most foods for the past 2 months irritated my stomach.

With nothing to lose here I am – day one. Three hours earlier before heading to the grocery store I ate two organic chicken drumsticks. By the time I was cashing out I began feeling hungry so as soon as I got home – I boiled 4 eggs, added 6 strips of turkey bacon to my air fryer and cut a very small slice of cheese ( lactose intolerant).

I drank one glass of water while the food was cooking. This diet recommend consuming water before and after the meal. When the food was ready I added hamalyan salt – I ate slowly- my mind was like – “ what are you doing” and the next second “you have nothing to lose”.

The food went down well. One hour later I visited my parents and oh boy I started sweating and my stomach felt very uncomfortable as if I may vomit anytime. I ignored the feeling and it subsided. Interestingly, I was not hungry around dinner time and I decided to consume water for the balance of the evening.

I continue to listen to black carnivore to ensure I got the basics. I also felt my stomach rumbling to go to the bathroom but nothing. Diarrhea was one of the symptoms to look out for.

On to day two.

Slow Down Absorption of Glucose

To slow down the absorption of glucose into the blood, here are a few strategies that can be helpful:

  1. Choose Low Glycemic Index (GI) Foods: The glycemic index ranks foods based on how quickly they raise blood sugar levels. Consuming foods with a low glycemic index can help slow down glucose absorption. Examples of low GI foods include whole grains, legumes,mstarchy vegetables, and most fruits. For African descendants use more non-starchy vegetables and fruits (with high water content) like watermelon, mangoes, and cucumbers – look up list of fruits with high water content. After a twenty one (21) day detox more raw fruits and vegetables can be included in your diet.
  2. Oils & fats: In the region where I live eighty percent (80%) of meals are prepared with some kind of oil. olive oil, corn oil, coconut oil, butter, lard, vegetable oils, any oil. Oils block glucose from entering the cell. If meals contain fat or oils consume two ( 2 ) 8 ounce glasses of water half hour before and two (2) glasses Of water two (2) hours after.
  3. Include Fiber-Rich Foods: Fiber slows down digestion and the release of glucose into the bloodstream. Opt for foods like whole grains, vegetables, fruits, and legumes that are high in dietary fiber. Incorporating a variety of fiber-rich foods into your meals can help manage blood sugar levels. The fruits and vegetables are best in their raw state without cooking.
  4. Pair vegetables with Protein: Combining vegetables with protein help slows down the release of insulin since no carbohydrates is included in the meal. The protein in the meal will provide the energy you need. Ensure to test and document.
  5. Practice Portion Control: Controlling the portion sizes of high-carbohydrate foods can help manage blood sugar levels. It is important to be mindful of your overall carbohydrate intake and eat moderate portions of foods like rice, pasta, and bread.
  6. Stay Active: Regular physical activity can contribute to better glucose regulation. Engaging in exercise helps the body utilize glucose effectively and can lower blood sugar levels. Aim for at least 150 minutes of moderate aerobic exercise per week, along with strength training activities.
  7. Limit Refined and Sugary Foods: Highly processed and sugary foods tend to be rapidly absorbed, leading to spikes in blood sugar levels. It is advisable to limit or avoid foods like sugary beverages, sweets, pastries, and white bread.
